Eat your veggies....

Yes, I've been on a veggie kick lately... and not the kind out of the can that have been sitting in salt and water for Lord knows how long... here's my latest super easy, yummy treat (and even hubby likes it).

Honey Glazed Carrots

1 Cup of Water
1 t. salt
1 Pound of Carrots (remember, I'm into saving baby carrots... use the "mommy/daddy" carrots... they're much tastier)
1 T honey
1 T chopped cilantro (good w/o this too)

Bring one cup of water & salt to a boil. Peel and chop carrots into bite-sized pieces... I like to chop them on the diagonal... they are so much fun to eat that way. :) Put carrots into boiling water and cover and simmer for 15 minutes. Drain off the water and add honey and cilantro. Let sit for 5 minutes until the flavors mingle (aka... "hello carrot, my name is honey... nice to meet you").

Sorry for being a little fruity... I know this was supposed to be about veggies. Anyway, remember what mama told you and EAT YOUR VEGGIES.

Only in Augusta, KS...

This week, I received a "Consumer Confidence Report" regarding our water supply from the city of Augusta that I just can't bear to throw away yet... it makes me stinkin' crack up every time I look at it. To be honest, I don't actually understand everything they are reporting, but there are two things that I understand very clearly:
  • There were two water samples taken last July that returned positive with E Coli (who knows how many samples were taken or how many glasses of water I drank on the contaminated days)
  • AND Augusta has the "Best Tasting Water in Kansas" - apparently a team of "professionals" judged water samples in Kansas and picked ours the best!!!
Are you rolling on the floor laughing your head off right now... I just don't know how those two things can be documented on the same report!!!??? My friend Erin put it best... Drink on Augusta, drink on.

One of my new favorite things...

A couple weeks ago I realized that I still had Christmas money left to spend. I love saving my money to buy little things along the way instead of spending it all on one big purchase (I don't know anyone that would do that... ahem... Eric:). Anyway... when I began thinking about this Christmas money, I realized that my Birthday is coming up and I usually get a little bit of cash for turning another year older (pretty sweet set up if you ask me)... I thought to myself, "I better get this Christmas money spent before the Birthday cash flow comes in." I don't have many things that I want... I'm usually pretty content... but there's been one item on my mind for a few weeks now (and it's not a purse or shoes, believe it or not).... drum roll, please.... duh, duh, duh, duh!!!



There might be a little bit of sass in this photo... but isn't that apron adorable??? I skipped out of the store with this cute little number. AND I must say, it helps me cook better, too! :)

I must look like a woman who needs an apron, too... because about 3 days after cooking in this little ditty, I receive a Mother's Day apron from my dad and his wife... with a matching one for Sadie. Too cute. :)

20 MINUTES

Earlier in the month I went to Topeka to visit my family. While we were there, Sadie found a pair of child sized scissors at my mom's house and thought they were the greatest thing ever. I also thought they were the greatest thing ever BECAUSE SHE SAT FOR A FULL 20 MINUTES and did nothing but cut a piece of paper into little bits. It was wonderful... I was able to do a lot of things in that 20 MINUTES.

So... when we got home what did I do??? I went to Wal-mart and purchased Sadie her own pair of Fiskars. And yes, this morning has been so crazy, that I just asked her if she wanted to use her special scissors... anything for 20 MINUTES of peace and quiet... and I figure it's good practice for her days of coupon clipping that lie ahead....

Can I get an "Oooooo..."???

I have been on a spring cleaning kick lately... de-cluttering, reorganizing, deep cleaning. It feels so good to accomplish some of these things that lurk around. There's one problem with spring cleaning, though... it causes me to be majorly distracted.

Sunday afternoon I began clearing the table and doing our lunch dishes. I opened up the fridge door to put our condiments away when I thought, "This thing is a mess." How did it possibly get this way??? So guess what... I quickly forgot about dishes and began unloading the thing. I got it all cleaned out, sprayed down, threw away the outdated items (I am embarrassed by how many expired condiments I had) and reloaded or fridge. But I couldn't stop there... the type A side of me said that the job wasn't complete until I cleaned out the freezer... type A can't stand not finishing a project. So I flung open the freezer door and got crackin'. AND, of course, took a picture for you... because that's what bloggers do.

Oh, and did I mention that I eventually got back to the dishes???!!!

Sing it girl...

Tonight Sadie and I were singing as Cole was dancing (his newest acquired skill... it's soooo cute!)... the tune went something like this... you may recognize it...

"Hallelu, hallelu, hallelu, hallelujah, CRAZY, the Lord!"

Yes, Sadie, sometimes the Lord's plans seem a little crazy... but they are always the best... and when you can't trace His hand, trust His heart, dear girl.

Could it be???

My brother, Brady, and I were raised on a little bit of Oak Ridge Boys Christmas. We decorated the tree as we sung these tunes and I think it was the only Christmas cassette tape we had growing up (except Mannheim Steamroller... which I consider lame-o).

A few years back, my dad purchased Brady and I an ORB Christmas CD for us to enjoy with our families... it was a wonderful idea, but I'm not sure my husband or sister-in-law have the appropriate amount of appreciation for the ORB Christmas music. All I can say is Eric better start falling in love with the Oak Ridge Boys soon BECAUSE yesterday he came home from work reporting that he heard that Oak Ridge Boys do a Christmas special in the Wichita area every couple years. I'm sitting here doing my happy dance just thinking about possibly going to see them sing a little "Christmas Carol." Does it get any better than this???

Boom, Boom, Ain't it great to be CRAZY?

I'm fairly well known for loosing my keys. I've even stranded myself in my home because the keys were missing... very depressing. BUT... lately, I've been forgetting LOTS of things... loosing important things... AND this problem is DEVASTATING to an organized person!!!

Just last week, I lost my garage door opener for 4 days. 4 DAYS!!! It was terrible. I had to go in and OUT of the front door with the baby carrier (and Cole, of course), Sadie, diaper bags, my purse, groceries, etc. Every waking minute I spent scrounging around for that opener... I laid awake wondering where I could have put it... it was not fun. Hubby found my garage door Genie in his truck... and I was a happy woman again.

THEN, yesterday I went to pay for a purchase with my debit card and it was NOT IN MY PURSE. I thought I was going to develop an ulcer before I could get home to look for it... thankfully I found it in my pants pocket from church on Sunday.... I was in too big of a hurry to devour my Mother's Day cobbler from Hog Wild to return it back to my wallet. Nice.

I think I need more sleep... otherwise, I may soon be loosing my mind...

What a girl wants, what a girl needs... ICE CREAM!

Tonight as I was sitting in Braum's, eating my ice cream (trying to keep count of how many peanut butter cups were in it) and watching Eric and Cole perfect their "catch the puff in your mouth" game, Sadie proclaims, "I was right! I did want a cone!" A girl ALWAYS knows what she wants!
